Cracking into (or daintily slicing the top from) a soft boiled egg, revealing a creamy, golden yolky middle, is one of the absolute joys of breakfast time. There's a sense of ceremony and luxury around preparing this morning staple.
If you want to level up your dippy eggs, it's time to buy better, and we highly recommend Fairburn's Famous British Blue Free Range Eggs - given a Gold by Simon Rogen MBE in the Great British Food Awards 2024.
Shaded a delicate pastel blue, the fresh eggs are produced from hens reared on the farm from a day old, fed with their own milled grains. Higher welfare conditions and a quality diet impact the overall taste and look of the eggs, which are filled with flavour, and have the most glorious golden centre.

In a nutshell, bring a pan of water to a rolling boil. Lower in your eggs (don't overcrowd the pan) using a slotted spoon, and boil for five minutes for a soft middle. Immediately place the eggs in a bowl of iced or very chilled water and leave for a minute to finish cooking. Then simply place in egg cups, slice off (or crack) the tops, and get stuck in!
