On the hunt for a tasty, quick, high-protein lunch? We hear you. This recipe delivers an intense flavour in less than 5 minutes – and includes all the flavours of a traditional British ploughman’s.

You can use a few slices of ready-pickled onions if you’re short of time, but we recommend making your own (you can prep them the night before) for an incredibly fresh, zingy taste.

Ingredients (makes 2)

  • 1 block halloumi, finely grated
  • 3 tbsp apple chutney
  • 3 large slices good quality ham
  • 4 cornichons, finely chopped
  • 1 tbsp chives, chopped
  • For the quick pickle (optional):
  • 1 medium onion, finely sliced
  • 2 tbsp balsamic vinegar
  • 1 tbsp sugar
  • Pinch salt

Method

1. Start by making your quick pickle. Combine your onions, vinegar, sugar and salt in a small non-reactive (glass is best) bowl, and leave to sit for 10 minutes or more.

2. Have all your other elements to hand. Warm up an 18-20cm non-stick frying pan, and sprinkle over half the grated halloumi in a circle, ensuring even coverage across the pan.

3. Dollop over half the chutney, ham, chives, cornichons and a few pieces of the pickled onion. When you can see the bottom of the halloumi is crisping up, fold one half over the top of the fillings (like an omelette) and serve up with dressed salad.
