Crispy potato waffles with chicken and hot sauce

Fibre is one of THE buzz words of the moment. Guidelines say we should be getting at least 30g per day. And one of our favourite ways to up our fibre count is with the good old British spud. ⠀ 

The average baked potato contains around 4g of fibre and, surprisingly, approximately 30% of the recommended daily amount of Vitamin C – it's practically a superfood! ⠀ 

A fun, family-friendly way to give a bit of pizzazz to a jacket potato is by smooshing it in a waffle machine, where it crisps up like a dream. ⠀ 

Not only this, but pre-baking and cooling your potatoes overnight increases their level of resistant starch, meaning they’ll keep you fuller for longer without causing a huge glucose spike. All the more reason to A: invest in a waffle machine, B: cook extra potatoes. ⠀ 

We’ve served ours with the crispiest air-fried chicken of all time, bacon, guacamole, and a drizzle of Great British Food Award-winning Bertie's Marvellous Pineapple & Basil Hot Sauce. ⠀ 

Your taste buds are going to love this! And if you prep the day before, the whole meal takes less than 20 minutes to cook.

Ingredients (serves 2) ⠀ 

  • 2 medium-sized jacket potatoes, baked 
  • Oil 
  • Sea salt (or seasoning of your choice) ⠀ 

For the chicken: ⠀ 

  • 4 boneless, skinless chicken thighs, halved 
  • 50ml milk and 1tsp any vinegar 
  • 1tsp garlic granules 
  • 1tsp dried sage 
  • 1tsp dried thyme 
  • 1tsp ground paprika 
  • 1tsp sea salt 
  • 150g cornflour ⠀ 

To serve: ⠀ 

  • Crispy streaky bacon 
  • Guacamole 
  • Bertie’s Marvellous Pineapple and Basil Hot Sauce ⠀ 

Method ⠀ 

1. Start the day before. Bake your jacket potatoes until tender in the middle and allow to cool. Combine the chicken with the milk, vinegar, salt and spices and leave in the fridge overnight. ⠀ 

2. Oil and season your potatoes and press into a heated waffle machine. Cook for 10 minutes until crisp. ⠀ 

3. While the waffles are cooking, prepare the chicken. Pour a scant tablespoon of oil into the tray of an air fryer and heat at 210C for 5 minutes. ⠀ 

4. Add the chicken and cook for 5 minutes. Turn over and cook for a further 5 minutes. It should be crunchy, crisp and juicy. ⠀ 

5. Layer the chicken over the waffles, crown with bacon and guac, and drizzle with hot sauce.
