Cardiff Mum’s Chicken Parm Melts

Serves 4
Ingredients
Vegetable oil
1/2 white onion, finely chopped
2 cloves garlic, minced
Salt and pepper
1tsp fresh or dried basil
1 small tin tomatoes
150g mayonnaise or garlic mayonnaise
1tsp basil pesto
3tbsp lemon juice
8 chicken breast mini fillets - approx 250g
100g breadcrumbs from stale bread
125g fresh mozzarella, sliced into 8 pieces
50g Grana Padano, grated
4 burger buns
Method
Heat some oil in a pan over a medium heat. Add the onion and one of the minced cloves of garlic, some salt and pepper, and cook until softened.
Add the basil. Fry for 1 minute.
Add the tomatoes and simmer until thickened. Taste for seasoning.
Add the mayo to a bowl with 1tsp of the basil pesto, half the lemon juice, the rest of the garlic, and mix well. Set 2tbsp of this aside.
Coat the chicken fillets in the rest of the mayonnaise, then roll in the breadcrumbs.
Heat some oil in a frying pan and add the chicken pieces, frying for around 5 minutes on each side. Place on a clean plate and sprinkle over the rest of the lemon juice.
Place the chicken into pairs on a tray, spoon 1tbsp of the sauce over each, 2 slices of mozzarella, and some of the grated Grana Padano.
Grill for 2-3 minutes until the cheese is melted.
Toast the buns and spread with a little more of the tomato sauce. Top with the chicken and some pesto mayo.
