Knickerbocker Glory

Introducing the ultimate British ice cream dessert - the knickerbocker glory! This elaborate ice cream sundae combines fresh strawberries, marshmallows, scoops of vanilla ice cream and anything extra anyone fancies, served in a tall glass! It's our favourite childhood ice cream, and a real treat for summer.

  • 6 strawberries, 4 hulled and halved and 2 left whole
  • 2 tbsps strawberry coulis or sauce
  • 6 scoops vanilla ice cream
  • 6 marshmallows, rose flavoured if you can find them
  • 2 fan wafers

Place a strawberry half at the base of each sundae glass and pour over a little coulis or raspberry sauce, plus some fresh raspberries.

Top with scoops of ice cream, then a marshmallow and repeat until all the ingredients have been used, reserving a whole strawberry for the top. 

Finish each with an ice cream wafer and serve immediately in tall sundae glasses, for an unashamedly retro childhood ice cream experience.

Cook's Tip: These are the traditional ingredients for a knickerbocker glory, but you can also shake it up a bit. Try using chocolate sauce and some almond brittle. Or, you could make it even fruitier by adding some British berries and some cherry syrup. And a mountain of squirter cream on top makes for a really decadent knickerbocker glory!
