Lunchables, all grown up

A playful twist on a lunchbox favourite, these homemade cheese-and-ham biscuit stacks are packed with nostalgia…

This is nostaglia right here. Who else was packed off to school with one of these little kits? Biscuits, cheese and ham to sandwich together and munch down, maybe with a cucumber or carrot baton chaser.

Ours are a cheeky nod to the modern lunchbox classic, and we think much tastier because we’ve used great ingredients. Make them for your next picnic or drinks party and people won’t stop talking about them. The recipe is easily scaled up for big gatherings.

Ingredients (serves 4 as nibbles)

For the biscuits:

  • 125g unsalted butter, cubed
  • 125g plain white flour
  • Seasoning
  • 1 tsp mustard powder
  • 110g strong Cheddar, grated

To finish:

  • Good quality ham
  • Cheese slices
  • Chilli jam

Method

1. In a bowl, rub together the butter and flour until you have breadcrumbs. Season, add the mustard powder and cheese and bring together into a dough. You might need to add a drop of water.

2. Wrap and chill for 30 minutes to 1 hour. Heat the oven to 180C and line 2 baking sheets.

3. Lightly dust a surface and roll the dough to around 5mm thick. Cut out using a fluted 4cm cutter. Reroll and cut any scraps and pop the biscuits on your trays, pricking all over with a fork. Bake for 10-12 minutes. Allow to cool.

4. To serve, cut ham and cheese using the same sized pastry cutter and serve alongside the biscuits with some chilli jam or your favourite chutney. Encourage everyone to get stuck in.
