Need to rustle up a treat but don’t have much hands-on time to spare in the kitchen? Let Fifteens come to the rescue. Sweet, aromatic and very pretty, they’ll end up being the talk of your party/fundraiser/school bake sale.

These coconut, cherry and marshmallow-infused bites are a modern Northern Irish bakery classic – most notably around the Ulster region. We think you’ll find them irresistible!

Ingredients (makes around 15)

  • 1 box Kensal Sugar Kitchen Coconut Marshmallows 
  • 15 digestive biscuits 
  • 15 glace cherries 
  • Half tin (about 200g) sweetened condensed milk 
  • 100g desiccated coconut – lightly toasted 
  • Pink icing to decorate (optional)

Method

1. Crush 12 of the biscuits with a rolling pin in a large bowl until quite fine. Add the other three biscuits and roughly crush so you have a few bigger pieces.

2. Cut the marshmallows over the bowl into four pieces each using lightly oiled scissors.

3. Roughly cut the cherries into the bowl with scissors.

4. Stir in the condensed milk and combine.

5. Spoon the biscuit mixture on top of a piece of greaseproof paper, forming a sausage shape of the size you’d like. Sprinkle over the coconut and roll to coat. Wrap in clingfilm and chill for at least 2-3 hours in the fridge before cutting and serving.
