We don’t claim this is the healthiest way to start the day (though good chocolate, seeds, nuts and oats all have bags of nutrition), but sometimes a treat is what’s needed in the morning – particularly at weekends.
This recipe has it all. Toasty Great British Food Award-winning oats from Glebe Farm, mixed with nuts and seeds, and coated either in sweet malty milk powder, coffee or chocolate. That’s tumbled with nuggets of fudgy dates, chonky pieces of Great British Food Award-winning coffee chocolate from Juthan Chocolate, and white chocolate buttons – just because.
It’s utterly dreamy and delicious. You won’t be able to pass the tub in the kitchen without reaching for a handful of this mix.
Ingredients
- 50g brown sugar
- 50ml honey
- 150g oil
- 1tsp vanilla
- 300g Glebe Farm oats
- 150g mixed nuts, roughly chopped
- 100g mixed seeds
- 60g malted milk powder
- 30g instant coffee
- 30g cocoa powder
- 100g dates, roughly chopped
- 100g Juthan coffee chocolate, cut into small pieces
- 100g white chocolate buttons, halved
- Large pinch sea salt
Method
1. Heat the oven to 140C and line three baking sheets.
2. In a pan, warm the honey, sugar and oil with the vanilla.
3. In a bowl, combine the oats, seeds and nuts.
4. Pour the liquid into the dry mix and coat well.
5. Divide the mix into three – moving two parts to two separate bowls.
6. To the main bowl, add the milk powder, to another the coffee, and the final bowl, cocoa. Stir each one well.
7. Pour each mix onto its own tray, spreading it out, and bake for 40-45 minutes until nicely toasted. Allow to cool, then pour into a tub with the chopped chocolate, chocolate buttons and dates. You could even add some chocolate-covered coffee beans!
8. Enjoy alone as a snack, with yoghurt and berries, sprinkled over ice cream or in a big bowl of milk.
