Set aside half of the grated cheese, then put all the ingredients into a large bowl. Combine until well mixed, then spoon into individual ovenproof bowls or one larger dish for sharing.
Bake the dip in a preheated oven at 180°c for 20 minutes, then take it out and turn on the grill.
Scatter the remaining grated cheese over the top of the dip, then grill until golden.
Leave the dip to cool slightly before serving. This is ideal with fresh bread, toasted pittas, crackers, tortilla chips or even celery and cucumber sticks.
