Parsley Hummus

Parsley Hummus
Add zing to shop-bought hummus by adding fresh herbs, lemon and a pinch of cumin

Serves 4

Ingredients

300g ready made houmous

30g finely chopped parsley

2 tbsps finely chopped mint

2 tbsps finely chopped coriander

2 tablespoons tahini

Juice of 1/2 lemon

Pinch of cumin

Method

Using a fork or spoon, fluff up t he h oumou s, then stir in the herbs and mix well. Beat in the tahini, lemon juice and cumin and season to taste.

Arrange in a shallo w bowl, and drizzle with a little more olive oil if desired and serve with vegetables and pi t ta wedges for dipping.
