Prawn Cocktail

Serves 4

Ingredients

3 little gem lettuces

Half a ripe avocado

1 tablespoon lemon juice and a wedge of lemon to serve

8 tablespoons Newman’s Own Thousand Island Dressing

250g peeled and cooked prawns

A little cayenne pepper

A little freshly ground black pepper

Buttered brown bread

Method

Thinly slice 3 little gem lettuces and place in the bottom of 4 bowls or glasses.

Half a ripe avocado and remove the skin and stone, then cut into small pieces, toss in 1 tablespoon lemon juice, season with a little freshly ground black pepper and arrange over the lettuce

In a small bowl mix together 8 tablespoons of Newman’s Own Thousand Island Dressing with 250 g peeled and cooked prawns.

Spoon the prawns over the lettuce and avocado, sprinkle with a little cayenne pepper and serve immediately with a wedge of lemon and a triangle of buttered brown bread.
