From homemade raspberry jam to traditional Bakewell tart, these recipes are ideal for using up a glut of raspberries
British raspberry season runs from May until October, although if you're growing them at home they're likely to be at their best between July to September. There are plenty of wonderful recipes that showcase the tart, juicy flavour of fresh raspberries - we particularly like using them in cakes! Here's 10 of our absolute favourites.
Homemade Raspberry Jam
All you need to make jam is a heavy saucepan, a couple of pints of raspberries and some granulated sugar. You'll need to get the mixture to a rolling boil and then wait for it to set, before decanting it into a sterilised glass jar. This homemade raspberry jam is the perfect recipe for using up a glut of your favourite summer fruit, and preserving the taste for the winter months.
Chocolate Chip, Cardamom & Raspberry Blondies
These blondies are made with brown sugar, meaning that they have a slightly caramelised taste and a chewy texture. The baking process is very easy - just mix all the ingredients together, tip into a square baking dish and cook in the oven for 25-30 minutes. They're an excellent snack to enjoy with your morning coffee.
Raspberry Custard Tarts
We can't think of a better way to show off fresh berries - the tart flavour pairs perfectly with the creamy custard and buttery pastry. Serve dusted with icing sugar.
No Churn Easy Raspberry Ripple Ice-Cream
We had to include an ice cream recipe for those warm summer days! And this one doesn't require any special equipment like an ice cream maker. To aerate the ice cream, you'll need to whisk egg whites using an electric mixer, slowly adding icing sugar. In another bowl, you'll whisk together heavy cream and condensed milk, before combining. A delicious raspberry coulis will then be lightly rippled through your creamy ice cream. Delicious! Once frozen, you can use the ice cream in a chocolate sandwich cookies recipe.
Mini Raspberry Ripple Doughnuts
These doughnuts are filled with a tangy yoghurt and raspberry mixture, which pairs perfectly with the soft, sweet fried dough. The most important part of the process is patience - make sure you give your doughnuts enough time to rise!
Raspberry Cranachan
This is a traditional Scottish dessert which layers cream, toasted oats and fruit. This recipe uses frozen raspberries, which are paired with a whisky and whipped cream mixture.
Cherry & Raspberry Bakewell Tart
This traditional British dessert consists of sweet almond frangipane and a lightly fragrant and sour jammy layer brought together in a crisp pastry case. However, this recipe is elevated by the addition of fresh raspberries.
Raspberry & Rose Marshmallows
Have you ever tried to make your own marshmallows? You'll have to make a raspberry sauce and infuse it with gelatine, which is then combined with whipped egg whites. The addition of rose water gives these marshmallows a lovely fragrance.
Raspberry Brioche Pudding
You can't go wrong with a bread and butter pudding, and making it with brioche adds a lovely soft texture and sweetness to the dish. Meanwhile, the tart berries really complement it. Sprinkle with sugar and bake in the oven until golden brown.
British Raspberry, Apricot and Almond cake
These sponges are infused with vanilla essence, malt extract and apricot puree, giving them a unique flavour. Add in the creamy filling studded with fresh raspberries, and you're onto a winner!
